If you’re a fan of Italian food, this cucumber Caprese chopped salad is a fun twist on a classic recipe, and it is super easy to make. It looks and tastes fancy but takes less than five minutes to throw together at the campsite. You can even make it at home beforehand and bring it along in a cooler or your RV fridge.
Ingredients:
- 1 cucumber, peeled
- 10 oz cherry tomatoes, halved
- 8 oz fresh mozzarella cut into bite-sized pieces
- 2 TBSP olive oil
- 1 TBSP balsamic vinegar
- 1 tsp dried basil or 1/2 TBSP fresh basil chopped
Salt and pepper to taste
Directions:
Peel and dice the cucumber and cut the cherry tomatoes in half (it’s also fine to use grape tomatoes). Cut the mozzarella into bite-size pieces, or if you can find a container of mini, individual mozzarella balls that makes this even easier since they’re already the right size. Mix the cucumber, tomatoes, and mozzarella in a large bowl.
Then whisk together the olive oil and balsamic vinegar. Add a bit of salt and pepper to taste – you don’t need a lot. If you’re using dried basil, add that to the dressing as well. If you have fresh basil you can mix it right in with the tomatoes, cucumbers, and cheese.
Pour the dressing on top of the salad and mix well so everything is evenly coated. You can serve it immediately, but it’s even better if you let it sit in the fridge for at least 5-10 minutes so that the dressing can marinate the tomatoes and mozzarella. And that’s it! Serve slightly chilled along with your main dish.
